My step daughter Ellie has begun to catch the baking bug and she was keen to bake some treats from my Hummingbird Bakery cookbook. I let her and her friend Heidi use my precious new mixer to make the most delicious peanut butter cookies…I say delicious, I was really ill so couldn’t taste them. However everyone else got to enjoy them and I can definitely vouch for the texture which was perfectly crunchy with a chewy centre and had the added bonus of big chunks of chocolate. I’m going to have to get her to make some more once I can taste again!
